Special Kalasan Fried Chiken From Yogyakarta

Hello guys, this time Siva wants to share a recipe for delicious fried chicken.. Already can’t wait what food we want to cook, yups, let’s just call it “Kalasan fried chicken”. Hmm, why can you give me a kalasan name ??? Of course this dish comes from one of the regions in Indonesia, precisely in the Kalasan area, sleman Yogyakarta. You can guess that the food that comes from this special area will definitely be special too. This food is quite popular in Indonesia, because of its sweet and savory taste which is added with tomato sauce or shrimp paste, for example, don’t forget vegetables such as lettuce, cabbage, and basil leaves too. Come on, let’s just tell Siva the same composition, how to make it:


  • ½ kg of chicken
  • 1 liter of coconut water
  • 6 sheets of bay leaves
  • 3 cm galangal mixed
  • 1 lemongrass stick
  • 3 pieces of orange leaf
  • 2 blocks of java sugar
  • Salt to taste
  • sufficient broth powder
  • 4 cloves of garlic
  • 3 cloves of shallot
  • 3 cm ginger
  • 2 cm turmeric
  • ½ tablespoon of coriander
  • 3 candlenuts

Home to Make:

  1. Puree garlic, onion, ginger, turmeric, hazelnut, brown sugar, salt
  2. Mix chicken, spices, galangal, orange leaves, bay leaves, lemongrass, and coconut water, 250 ml water then presto the chicken until cooked and the water recedes. When boiling chicken, use medium heat, okay?
  3. Then fry the chicken until golden yellow
  4. Kalasan chicken is ready to be eaten with a side dish of chili and vegetables
