  • 1 kg of free-range chicken
  • Water
  • Cooking oil
  • 10 cloves of red onion
  • 8 cloves of garlic
  • 6 Candlenut
  • 1 clove of turmeric
  • Ginger
  • 2 tsp coriander
  • 1 tsp Pepper
  • 2 sheets of bay leaves
  • 2 Lemongrass
  • Galangal
  • 100 ml of coconut milk
  • 2 tsp Salt
  • 2 tsp of chicken stock
  • 1 ½ tbsp granulated sugar


  • Puree shallots, garlic, hazelnut, turmeric, coriander, ginger, and pepper using a blender. Don't forget to add a little oil to make it easier to smooth
  • Heat the oil on medium heat then saute the spices
  • Add galangal, lemongrass, and bay leaves then stir so that the spices are well blended and cooked
  • Add 1 liter of water then add the chicken, salt, chicken stock, and sugar. Stir until well blended
  • Cook until the chicken is tender and the water is slightly reduced then add the coconut milk and stir until it boils
  • When the opor is soft and perfectly cooked then remove from heat and ready to serve.
